I love roasting a bunch of vegetables and seasoning each one differently. This makes a perfect platter to serve your guests.
Preheat oven to 425 degrees F.
Place vegetables on one or two large baking sheets. Drizzle with oil then season with salt and pepper. Roast for 20 minutes.
Note: Add your favorite seasonings to increase flavor on vegetables. I love to add a different spice/herb to each vegetable when I share on a large platter for entertaining.
