Roasted Vegetable Platter

I love roasting a bunch of vegetables and seasoning each one differently.  This makes a perfect platter to serve your guests.


  • 2 medium sweet red peppers, cut into slices
  • 1 medium red onion, cut into wedges
  • 1 medium yellow summer squash, cut into slices
  • 1 pound whole fresh mushrooms
  • 1 pound green beans, trimmed
  • 4 carrot stalks, sliced into large sticks
  • Olive oil
  • Salt and Pepper

  • Himalayan salt
  • Rosemary
  • Thyme and Lemon Pepper


  1. Preheat oven to 425 degrees F. 

  2. Place vegetables on one or two large baking sheets.  Drizzle with oil then season with salt and pepper.  Roast for 20 minutes.

  3. Note:  Add your favorite seasonings to increase flavor on vegetables.  I love to add a different spice/herb to each vegetable when I share on a large platter for entertaining.
