Roasted brussel sprouts and shiitake mushrooms

I bought a package of brussel spouts and shiitake mushrooms during my weekly shopping. For dinner we made fresh tuna on the grill and I thought this would be a great side dish. I had one shallot and 4 slices of bacon. I decided to put it all together.



  • 1 package brussel sprouts
  • 4 slices of bacon. Cut into slices
  • 8-10 shiitake mushrooms clean and cut into slices
  • 1 shallot, diced
  • Salt and Pepper to taste
  • 1/2 teaspoon red pepper flakes (optional)
  • Olive Oil to drizzle
  • Handful of fresh parsley, chopped for garnish


  1. Preheat oven to 400°F. Rinse brussel sprouts and take off any brown leaves. Put in a bowl and add olive oil and a shake of salt and pepper. Put on a baking sheet pan and roast for 20 minutes (line the baking sheet with aluminum foil)

  2. Take the slices of bacon and cut into strips (small) and sauté in a medium pan. Once they crisp up take out and put on a plate lined with a paper towel. Do not discard the bacon fat.

  3. Keeping the pan hot and the bacon fat in the pan add the mushrooms and let cook for about 3 minutes. You will notice that the mushroom soak up all the bacon fat. Add the shallots and let cook for another 3 minutes. Add red pepper flakes if you decided to included.

  4. When the brussel sprouts come out of the oven add them to the sauté pan and the cooked bacon.

  5. If the pan gets dry add olive oil and taste mushroom and add salt and pepper if desired.

  6. Put into your serving dish and add chopped parsley as a garnish.
