Raisin Chia Cookies

Jake's toy happened to be near me when I took this picture!  How cute...  Well I am getting ready for spring and we have been cleaning like crazy!  All of our cabinets (where does that stuff come from) and I was organizing our large pantry!  I made these cookies by finding the raisins and went from there.  

They were a hit!  Whew....    So yummy..  Go ahead and give them a try!

They actually remind me of oatmeal raisin cookies but better.

 

Ingredients

  • 1 cup almond butter, creamy
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup coconut sugar
  • 1 teaspoon cinnamon
  • 2 tablespoons chia seeds
  • 1/4 teaspoon sea salt
  • 1/2 teaspoon baking soda
  • 1/2 cup shredded coconut, unsweetened
  • 1/2 cup raisins

Directions

  1. Preheat oven to 350 degrees.  Prepare your baking sheet by lining with parchment paper and set out a rack for cooling.

  2. In a mixing bowl add in almond butter and egg.  Stir to combine and create a creamy mixture.  Add in vanilla and stir together.

  3. Add in coconut sugar, chia seeds, salt, baking soda and coconut.  Combine very well then fold in raisins.

  4. Use an ice cream scoop or tablespoon and drop on the prepared baking sheet.  *You do not need to flatten them.  Bake for 10-12 minutes then carefully remove from baking sheet and set on rack to cool.
