Quinoa Chicken and Spinach Soup

I always make a salad when using quinoa but today decided to make soup!  I just love grabbing a rotisserie chicken from the store as it makes weeknight meals so easy and delicious!

Ingredients

  • 1 tablespoon olive or coconut oil
  • 1/4 cup diced onions
  • 1 clove garlic, minced
  • 1/2 cup shredded broccoli
  • 1/2 cup shredded cabbage
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground pepper
  • 1 1/2 teaspoon Italian seasoning
  • 1 cup quinoa
  • 6 cups low sodium chicken broth
  • 2 cups rotisseri chicken chopped
  • 2 cups baby spinach

Directions

  1. Heat a Dutch oven or large pot over medium-high heat.  Add in oil and once hot add in onion and garlic.  Let cook for 1 minute then add in broccoli, and cabbage.  Lower heat to medium and stir around using a wooden spoon.

  2. Add salt, pepper, Italian seasonings, quinoa and chicken broth.  Let the broth get very hot (about 2-3 minutes) then add in chicken and spinach.  Cover for 5-7 minutes then ladle and enjoy!
