Pork Tacos with a Summer Salsa

This is a great way to use my 5 Ingredient Pulled Pork in another recipe.  An my Paleo Tortillas




  • 2 roma tomatoes, chopped
  • 1 jalapeño pepper, seeded and chopped (about 1 teaspoon)
  • 1 tablespoon red onion, finely chopped
  • 1 tablespoon fresh cilantro, minced
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground pepper
  • 1 tablespoon extra virgin olive oil, plus more for pan
  • 1 teaspoon cider vinegar
  • -----------------------------------
  • 4 flour tortillas
  • 2 cup left over pulled pork
  • 1 1/2 cups shredded cheese
  • Shredded lettuce
  • Thinly sliced red onion


  1. In a medium bowl add chopped tomatoes, jalapeño pepper, red onion, cilantro, salt, pepper, olive oil and cider vinegar.  Combine ingredients together and set aside.

  2. Set out your tortillas.  Top with shredded pulled pork, cheese, lettuce and red onion. 

  3. Top each taco with fresh summer salsa!  Enjoy

  4. Serve with extra salsa.
