This was actually the first time I made peanut brittle. I thought these would go well in my cooking tins! It's really easy to make just don't leave the stove. This was my second batch as I went down stairs to move the clothes from the washer and dryer. Not a great idea!! (thank god for candles)
Butter a rimmed baking sheet then set aside.
Stir together sugar, 1/2 cup water and corn syrup in a medium saucepan. Cook over high heat, without stirring, until sugar begins to melt and turn golden, about 3 minutes. Continue to cook, stirring occasionally, until sugar has melted and mixture turns golden amber, about 10 minutes.
Remove pan from heat then stir in salt, baking soda and peanuts. Spread mixture to evenly on the prepared baking sheet.
Let cool completely, about 15 minutes. Break brittle into pieces. Brittle can be stored in an airtight container, up to 2 weeks.
