Parsnip Puree

I prepared this parsnip puree with my Braised Veal Shanks with Fresh Herbs and it was a great combination. I added 3 potatoes just to give some additional texture. You can omit if you prefer!


  • 1 pound parsnips, peeled and sliced
  • 3 medium sized white potatoes, peeled and chopped
  • 1 tablespoon and 1 teaspoon sea salt
  • 3/4 teaspoon freshly ground pepper
  • 3/4 stick unsalted butter
  • 1/4 cup milk or cream
  • 1/2 cup chicken broth
  • 3 clove of garlic, peeled and gently smashed
  • 2 sprigs of thyme
  • Olive oil


  1. In a large pot filled over 1/2 with cold water add parsnips and potatoes. Cover and bring to a boil and add in 1 tablespoon of sea salt.

  2. Lower to medium heat and cook until fork tender (about 15-18 minutes).

  3. Drain and let cool for about 5 minutes.

  4. Add to your KitchenAid® 3-Speed Blender then add in salt, pepper, butter, cream, broth, garlic and thyme. Blend until smooth. Taste for any additional seasonings and milk or broth.

  5. Pour into a bowl to serve and drizzle with a little olive oil.
