Panna Cotta with Berries

This is a great dessert for entertaining.  You can make these a day in advance and let sit in wine or martini glasses until ready to serve.  If making in advance, just add the berries before serving.

  • 1 and 1/2 cup (full fat) coconut milk at room temperature
  • 1 tablespoon unflavored powdered gelatin
  • 2 and 1/2 cups heavy cream
  • 1/3 cup raw organic honey
  • 1 tablespoon coconut sugar
  • 1/2 teaspoon vanilla
  • 1/4 teaspoon sea salt
  • 2 cups fresh raspberries


  1. Add coconut milk to a bowl and sprinkle in gelatin.  Let stand for 5 minutes.

    Pour coconut milk to a medium saucepan and stir over medium heat and let simmer for about 5 minutes.


  2. Whisk in cream, honey, coconut sugar, vanilla and salt.  Continue whisking until the sugar has dissolved; about 5 minutes

  3. Remove from the heat and divide into 6 wine, martini or other decorative glasses or mugs.  Refrigerate for 3-5 hours before serving.

    Pour milk in your measure cup or bowl.  (I keep it in the measuring cup then I don't have to dirty a bowl).  Sprinkle gelatin over and just stir once.  Let stand for 5 minutes. (This allows gelatin to soften and begin to work).

  4. Pour milk into a medium saucepan and stir over medium heat just until the gelatin is completely dissolved but the milk does not boil, about 5 minutes.  Add the cream, honey, sugar, vanilla and salt.  Stir until the sugar dissolves, 5-6 minutes.

  5. Remove from the heat.  Pour into 6 decorative glasses or mugs until they are 1/2 full.  Cool slightly. Refrigerate until set, at least 5 hours.


  6. Spoon the berries on top before serving.
