Pan Roasted Garlic and Sage Quail

Quail is a very traditional dish in Italy, you do not want to overcook this delicate poultry. I love to grill eggplant, zucchini and red pepper to serve with this dish!

*CHEFS NOTE* Quail can be hard to find at your local grocery stores. I go to D&D Market in Hartford, CT for my Italian meats, sauce, and other ingredients.



  • 6 whole quails
  • 2 teaspoon sea salt
  • 1 teaspoon freshly ground pepper
  • 1 shallot, chopped (2 tablespoons)
  • 8 pieces of fresh sage leaves
  • 10-12 cloves garlic, peeled
  • 1/4 cup olive oil


  1. Preheat oven to 350 F.

  2. Add quail to a 9x13 baking dish.

  3. Season with salt and pepper.   Add in shallot, sage leaves and whole garlic cloves.

  4. Drizzle with olive oil.

  5. Bake for 40 minutes and enjoy with your favorite roasted vegetables.
