Paleo Zucchini Brownies

My husband loves chocolate and I do a really good job keeping it healthy and real...   With all of the amazing zucchini this season here is another great paleo recipe I created to share with you. Enjoy..



  • 1 cup almond butter
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon baking soda
  • 1/3 cup coconut sugar
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon sea salt
  • 1 teaspoon instant coffee powder
  • 2 small zucchini
  • 1 cup dark or semi-sweet chocolate chips


  1. Preheat oven to 350 degrees. Grease an 8 x 8 or 9 x 9-inch pan then line with parchment paper.

  2. In a large bowl combine the almond butter, egg and vanilla.  Mix until smooth then mix in baking soda, coconut sugar, cacao powder, salt and coffee. Stir until nice and smooth.

  3. Fold in zucchini and chocolate chips. Pour into prepared pan and bake until a toothpick comes out clean in the center of the pan.

    Please do not over bake as it will cook a little more while resting.

    Cooks note - 9 x 9 pan takes about 35-45 minutes. An 8 x 8 takes about 40-50 minutes. Allow to cool before slicing.
