Paleo "Riced" Turkey Stuffed Cabbage

I have a few Stuffed Cabbage recipes and links are provided below.  This recipe was inspired by the lonely cabbage left on the shelf at the farmers market, ground turkey I already had in my freezer and the 2 cups I reserved from this recipe.

When I make a baked dish like this I always take a moment to decide how I want to serve it.  I just love my Emile Henry baking pans.  They are great from oven to table!  Just wanted you to know that!  xo

 

Ingredients

  • 1 head cabbage
  • 1-2 tablespoons olive oil or coconut oil
  • 2 cups riced cauliflower, broccoli or combined
  • 1 small onion, diced
  • 1 clove garlic, minced
  • 1 pound ground turkey
  • 1 teaspoon dried parsley
  • 1 large egg
  • 1 teaspoon kosher salt plus more
  • 1/2 teaspoon freshly ground pepper plus more
  • 1 28 ounce can tomato sauce
  • 1/2 cup white vinegar

Directions

  1. Cut the core of the cabbage.  Take a large glass microwave safe bowl and place the cabbage in the center.  Fill with water to almost reach the top of the cabbage. Microwave for 10 minutes.  Let cool.

  2. Heat a large sauté pan over medium heat.  Add about 1-2 tablespoons of oil.  Add rice cauliflower, broccoli, onion and garlic.  Let cook for about 7-8 minutes.  Season with a pinch of salt and pepper.  Set aside.

  3. Preheat oven to 350 degrees F.  Take a baking dish and drizzle oil at the bottom. 

  4. In a large bowl add ground turkey then add in cooked vegetables.  Add in egg, parsley, salt and pepper.  Combine well.

  5. In another bowl combine sauce, white vinegar, 1 teaspoon of salt and 1/2 teaspoon of freshly ground pepper.  Stir well.

  6. Remved the top leaves and lay at the bottom of the prepared baking pan.  Remove the remaining leaves.  Trim the center vein off the center of each leaf.  Add a big heaping of turkey mixture in the center of the leaf.  Fold the sides over the filling then roll the remains while tucking in the sides.  Lay seal side down on the leaf in the pan.   Continue rolling until you finish all of the mixture (or leaves).  Pour sauce over the stuffed cabbages.  Cover with foil and bake for 1 1/2 hour. Remove foil and continue baking for another hour.
