I am having fun with all of my new pumpkin recipes this fall season. We may have more desserts than side dishes on Thanksgiving.
I have some cute search from petite pumpkin cocotte from Le Creuset and decided to serve Paleo Pumpkin Chocolate Chip Pudding. I made pumpkin crème brûlée with it too. These are just adorable and I think it makes the pudding taste better. Let me know what you think……
Add pumpkin, coconut milk, almond butter, vanilla, cinnamon, nutmeg, salt and honey in your blender and mix until smooth.
Pour into a mixing bowl and fold in chocolate chips.
Divide into your ramekins or a bowl to refrigerate until ready to enjoy!
Note: I like to drizzle coconut milk before serving or whip up fresh whipping cream! Enjoy
