This stuffing reminds me of my Nana’s pork stuffing. She called it pork butt stuffing didn’t add bread to hers so I guess we enjoyed a Paleo stuffing! This is my favorite way to enjoy stuffing but I am guilty of pouring gravy and topping with cranberry sauce.
Preheat oven 305 degrees F.
Heat a large sauté pan with oil over medium heat.
Add celery and let cook for about 3 minutes (until it becomes tender). Add in shallot, onion and garlic. Let sauté for about 2 minutes. Take out of pan and put into a large bowl.
Add remaining ingredients except the butter and combine well.
Prepare a baking dish by coating with oil and add pork/beef mixture. Top with pieces of butter
Bake for 1 hour.
Note: Check it when you are baking so it doesn’t dry out. I like to drizzle turkey drippings over the top about 1/2 way through.
