My nana would make a large Italian sandwich for lunch on weekends. She would call it an Airplane- I'm not sure why but it could be because she made enough to be able to serve a full airplane of passengers! We also call this sandwich a hero when it is individual. This was a recipe that I just started to put together with items handy in my pantry.
*CHEFS NOTE* I suggest you enjoy these upon making them. I noticed that one had hardened after sitting on the counter for a while, but I put it in my food processor and created bread crumbs for my chicken parmesan! How brilliant was that?
Preheat oven to 325 F. Prepare a baking sheet with parchment paper. Place cashews in your food processor and pulse until very smooth.
Using a stand mixer (or by hand) add in the cashews, coconut flour, almond flour, salt and baking soda and turn mixer on low to combine.
Keeping the mixer on low, add one egg at a time then add in apple cider vinegar, coconut milk and 1/4 cup melted butter. You will not have a ball of dough. Remove from mixer and divide mixture into 4 balls.
Using your hands roll dough then place on the parchment paper and form into the little sub roll.
Take remaining butter and brush on rolls, then sprinkle with basil and parsley. You can also add a little extra sea salt.
Bake for 25 minutes then slice and make your Italian hero with your favorite Italian meats!
