Paleo Granola Bars

You may notice I have a paleo granola crunch recipe and we make it all the time. I keep the container on the counter and it makes a great afternoon snack with my tea!

I thought to use the similar recipe but add some almond butter (sun butter is good too) and few extra ingredients to create a bar! I was really happy with the results and am so glad to share it with you. I hope you enjoy both of these recipes!



  • 1 cup sliced almonds
  • 1/2 cup raw sunflower seeds
  • 1/2 cup raw pepitas (pumpkin seeds)
  • 1/4 cup pistachios, chopped (optional)
  • 1 1/2 cup finely shredded coconut, unsweetened
  • 1/3 cup dried blueberries
  • 1/2 cup almond meal
  • 2 tablespoons flaxseed meal, ground
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 1/2 cup coconut oil
  • 1/2 cup local honey
  • 1/4 cup plus 1 tablespoon almond butter
  • 3/4 cup mini chocolate chips, unsweetened


  1. Preheat oven to 350 degrees F. 

  2. Line a baking sheet with parchment paper.

  3. In a large bowl add almonds, sunflower seeds, pepitas, pistachios, coconut, dried blueberries, almond meal, flaxseed, vanilla, cinnamon, baking soda and sea salt. 

  4. Combine all ingredients well with a spoon.

  5. In a microwave safe bowl add in coconut oil, honey and almond butter and set for 40 seconds. Stir well to incorporate together then pour over the dry ingredients.

  6. Add in chocolate chips and combine.

  7. Using a rubber spatula spread out granola batter on the prepared baking sheet then make an even layer.

  8. Bake for 15-18 minutes or until golden brown.

  9. Let sit and cool completely by placing in the refrigerator for at least 45 minutes.

  10. Slice into bars and either individually fold in parchment paper or store in a sealable container in the refrigerator.  Bring to room temperature before eating!
