My grandaughter loves making these little filled pancakes. We always saute up apples but she likes to make a few filled with chocolate chips! Either way it's a fun treat for us to make together. We have the cute Ebleskiver pan so it makes it even more exciting. I received an order of Coconut Flour and Coconut Sugar from Moon Rabbit Foods® and decided to make these Paleo! In a saute pan over medium heat add in ghee or butter to melt. Add in chopped apples and cook for about 10 minutes over low-medium heat. Until they become soft.
In a small bowl, mix together the coconut flour, arrowroot powder and sea salt with a fork, making sure to break apart any clumps. Set the bowl aside.
Divide eggs in 2 separate bowls. Whisk eggs whites until frothy and begin to form stiff peaks.
In a medium mixing bowl whisk egg yolks then add in butter, sugar and coconut milk. Add in the flour mixture and blend until well combined. Fold in egg whites using a spatula (do not mix just fold around mixture).
Brush pan with melted ghee, butter or coconut oil over medium heat. Fill each each circle halfway full of batter then add in about 1/2 teaspoon or so of apples the middle of each. Add enough batter to cover.
The batter cooks fairly quickly (under 1 minute). Use a wooden skewer to flip them over and cook on the other side for under a minute. Remove them and set aside, brush the pan with a little more oil, and cook the next batch.
Serve with some warmed maple syrup.
