Paleo Cast Iron Pizza with Chicken, Artichoke and Spinach Pizza

I go on these kicks and after our amazing trip to the Virgin Islands making a pizza sounded so good!  I had my cast iron pan out after making my husband my paleo german apple pancake so it seemed like a great idea to make a pizza in this pan!  WOW we loved it.  Normally when I make a pizza we like it thin but this was a nice change.

 

Ingredients

  • 1/2 cup warm water
  • 1 package gluten free yeast (fast acting)
  • 2 teaspoons coconut sugar
  • 1 teaspoon sea salt plus more
  • 2/3 cup almond flour
  • 1/3 cup tapioca flour
  • 1/3 cup arrowroot flour
  • 1 1/2 teaspoon double acting baking powder (aluminum free)
  • 1/4 cup extra virgin olive oil plus more
  • 2 cups baby spinach
  • 1 teaspoon garlic powder
  • 1 teaspoon dried basil
  • 3/4 cup rotisserie chicken, shredded
  • 6 pieces artichokes, quartered
  • 1/2 teaspoon red pepper flakes, optional
  • Grated parmesan cheese, optional

Directions

  1. In a glass measuring cup add in warm water and yeast.  Let sit for 10 minutes.  Add in coconut sugar and salt.   Set aside
  2. In a large mixing bowl add almond flour, tapioca flour, arrowroot flour and baking powder to combine with a fork.  (This will help combine evenly).
  3. Add in water mixture and mix around then drizzle in olive oil and combine mixture with a spatula or wooden spoon until you create a ball.  Cover with a warm towel for 20 minutes.
  4. Preheat oven to 425 degrees F.
  5. Heat your cast pan to a medium heat with about 2 tablespoons of olive oil and brush around the pan (bottom and sides).
  6. With the heat on add in dough and press around the pan carefully to cover the bottom and go up the edges.  (I made it a little thicker up the edges and thinner in the middle) If it gets too hot then remove from heat while spreading the dough.
  7. Season 1 teaspoon of sea salt over the dough then top with spinach. Season with garlic powder and basil then top with chicken and artichokes. Add red pepper flakes if you wish.
  8. Drizzle with a little extra virgin olive oil. Remove from heat and place in the preheated oven for 13 minutes.
  9. Remove from cast iron pan, slice and enjoy!
