Paleo Carmel Popcorn

We all have a weakness and popcorn is mine!  I love carmel corn and the only way I will enjoy it is by making it myself!  Go ahead and give this a try...  

 

Ingredients

  • 1/4 cup coconut oil, divided (melted)
  • 1/2 cup popcorn kernels
  • 1/4 cup raw local honey
  • 2 tablespoons unsalted butter
  • 1 tablespoon organic turbinando raw cane sugar
  • 1 teaspoon sea salt

Directions

  1. Heat a large deep pot over medium-high heat with the cover on.  Once hot add in 1 1/2 tablespoon of coconut oil and let the oil get really hot.  Add in kernels and cover.  Wait 10 seconds then start shaking the pot over the burner.  After 1 1/2 minutes the kernels will start popping.  Continue shaking until the popping slows down (my method - count between pops and if you reach 10 remove from heat). Set aside.

  2. In a small saucepan over medium heat add in remaining oil.  Add in honey, butter, sugar and salt.  Bring to a boil then drizzle over popcorn and toss evenly.  

  3. Place carmel corn on a baking sheet lined with parchment paper and let cool for about 10  minutes then place in a bowl and enjoy!

  4. Tip:  If you want to make popcorn easy using your microwave - Well it's so easy. Take the kernels and season with a little sea salt. Add to a brown lunch bag and fold the corners in towards the center then fold over the top to create a really good seal.  Place side down in your microwave and set for 2 minutes but don't walk away.  Depending on your microwave it could be sooner or need more time. I count between pops - It you go to 10 then stop the microwave.

    I've read several just right stuff here. Certainly price bookmarking for revisiting.
