Paleo Beef Tenderloin

I am a seafood and chicken kind of gal but my family loves beef!  When we have all of the kids it's easy for us to make a beef tenderloin.  

I always start by olive oil and a little salt and pepper!

My husband went up in my office and found some Black Dog Belly Rub from Mom's Gourmet and seasoned away.  We roasted and took it out medium rare in the middle and everyone had a piece they enjoyed. 

(I even made popovers which was enjoyed my me - and everyone else)


  • 4 pounds beef tenderloin, trimmed
  • Olive oil
  • 1 1/4 teaspoon sea salt
  • 3/4 teaspoon freshly ground black pepper
  • 3 teaspoons black dog belly rub


  1. Preheat oven to 425 degrees F.

  2. Set the beef tenderloin on your roasting pan.  Drizzle with olive oil then season all sides with salt and pepper.  Season with Black Dog Belly Rub (as much as you want).  

  3. Roast for 20-25 minutes or until your thermometer reaches 125 degrees.

    Remove from oven and let sit for 10 minutes loosely covered with foil.


  4. Place on a board and slice then put on a serving platter (or serve from the board).
