Paleo Apple and Coconut Cookies

It's apple time of year!  These were so easy to create and delicious to eat...

 

Ingredients

  • 1-2 apples, peeled (about 1 cup)
  • 1 cup almond flour
  • 1/2 cup tapioca flour
  • 1/8 teaspoon sea salt
  • 1/2 teaspoon baking soda
  • 1/4 cup coconut sugar
  • 1 cup shredded coconut, unsweetened
  • 2 teaspoons cinnamon
  • 1 teaspoon vanilla extract
  • 3 large eggs, room temperature
  • 2 1/2 tablespoons coconut oil, melted and cooled

Directions

  1. Preheat oven to 350 degrees F.  Line a baking sheet with parchment paper.

  2. Take the apples and shred by using a box grater.  Squeeze in a paper towel to remove some of the water.  Place ina large bowl.

  3. Add in almond meal and tapioca flour to combine into the apples.  Add in salt, baking soda, coconut sugar, coconut, cinnamon and vanilla then combine well.

  4. Whisk the eggs in a small bowl then add in oil while mixing.  Add to the apple mixture and combine well.  

  5. Using a tablespoon or small scoop and place on the lined baking sheet.  Use your fingers to form the cookies.

  6. Bake for 22-28 minutes; until golden.  Enjoy
