Oats and Nuts Granola Bar

I always have raw nuts, almond butter and honey in my house. I had gluten free oats and decided to make these Oats and Nuts Granola Bar for us to have during the week.



  • 1 cup dates, pitted
  • 3/4 cup all natural almonds, loosely chopped
  • 1/2 cup pecans, chopped
  • 1 1/2 cups rolled oats ( or gluten free)
  • 1/4 cup honey
  • 1/2 cup almond butter or nut butter
  • 1/2 cup dried blueberries (or another fruit)
  • 1 teaspoon vanilla
  • 1/2 cup all natural chocolate chunks


  1. Preheat oven to 350 degrees F.

  2. In your food processor add dates and blend until they start clumping together.  Remove and place in a large mixing bowl.

  3. Add almonds, pecans and oats on a baking sheet.  Place in preheated oven for 15 minutes.  Remove from oven and add to mixing bowl.

  4. In a small pot over low heat add in honey and almond butter.  Stirring with a spatula until smooth.  Remove from heat and combine into oat mixture.

  5. Add in blueberries or any other fruit along with vanilla and chocolate chunks. Combine well.

  6. Line your baking sheet with parchment paper then add mixture.  Use your hands to press and evenly spread out to fit the pan.

  7. Reduce temperature to 300 degrees F. and bake for 25 minutes.

  8. Remove from oven and let cool.  Grabbing onto the parchment paper remove from baking pan to a wooden cutting board and chop into desired pieces.

  9. Note: I took about 1/2 of the granola bars and placed in a sealed container to leave on the counter.  The rest I sealed in a freezer safe bag to keep fresh and use at another time.
