Nut Butter Chocolate Bites Muffins

I have been on a muffin kick lately!  I do live my muffin pan and this recipe makes 12 perfect muffins. I use an ice cream scoop to keep them all the same size in shape.

I also used the enjoy life mega chunks. 

Our friend Joe came over for dinner and he and I were digging into them before we ate my Veal Parmesan which was also amazing.

  • 2 cups almond flour
  • 1/4 cup coconut sugar
  • 1 teaspoon instant espresso
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon sea salt
  • 1 cup nut butter
  • 1/4 cup coconut oil, melted
  • 3 large eggs
  • 1 teaspoon vanilla
  • 1/2 cup chocolate chunks


  1. Preheat oven to 375 degrees and line 12 muffin tins with paper.

  2. In a large mixing bowl add almond flour, coconut sugar, espresso, baking soda, baking powder and salt.  Mix with a fork to ensure dry ingredients are smooth and there are no lumps. 

  3. Add in coconut oil and combine into the  mixture.  Whisk the eggs in a small bowl then add to the mixture with vanilla and mix well to combine with a spoon or spatula.  Then fold in mega chunks.

  4. Using an ice cream scoop or large spoon and divide mixture into each muffin cup.  Bake for 12-15 minutes or until a toothpick comes out clean.  Enjoy
