  • 2 cans tuna albacore packed in olive oil, drained and flaked
  • 1/2 14oz. can of artichoke hearts, roughly chopped (or more if you want)
  • 1 roasted red pepper, patted dry and chopped
  • Romaine lettuce or Mixed greens
  • 1 hard boiled egg, quartered
  • 1/4 cup kalamata olives, sliced in half
  • 1-2 roma tomatoes, diced
  • 1/4 english cucumber, diced
  • 1 teaspoon capers, drained
  • 2 tablespoons olive oil or more to drizzle

  1. In a large bowl add tuna, artichoke, olives and peppers. Add olive oil 1 tablespoon at a time and combine together.

  2. Break apart lettuce and form a layer on your platter or divide into serving bowls.

  3. Add quartered boiled egg, olives, tomatoes, cucumbers then add the tuna mixture and top with capers.

  4. You can drizzle with additional olive oil

  5. Enjoy with your friends sitting outside on a beautiful day!

Cooks Note: You can add any other vegetables. I like to add thinly sliced red onion and anchovies!

Cindy’s tip for making the perfect boiled egg – In a pan add the eggs and cover with water (about 2 inches) bring to a boil. Take off heat, cover and let sit for 13 minutes. Take out of water and peel…
