Nana’s favorite baked Pancake!

When my nana was alive and I was in college we would go to dinner (breakfast) one night a week. Then she would take me grocery shopping. It was a great evening for both of us to spend time together. Her favorite was a baked pancake with fresh fruit. I have so many fond memories of her and the times we spent together. I wanted to re-create this recipe and dedicate a delicious breakfast to her. Miss you and Love you.

 

Ingredients

  • 1/4 cup of butter
  • 1 cup all-purpose flour
  • 1 cup milk
  • 6 eggs, lightly beaten
  • 1/2 teaspoon good quality vanilla
  • 1/8 teaspoon salt
  • 8 inch round baking dish

Directions

  1. Preheat oven to 350°F.

  2. Melt butter in a medium baking dish by putting in a oven for a few minutes. Then using a pastry brush to coat the edges.

  3. In a medium bowl, mix flour, milk, eggs, vanilla and salt. Pour the mixture into the prepared baking dish.

  4. Bake on center rack in the preheated oven for 30 to 35 minutes, or until golden brown.

    ***I enjoyed with sugar free blueberry syrup I purchase at the farmers market. It was delicious!
