Mini Whoopie Pies

Don't we all just love whoopie pies!  I made them mini to limit the guilty pleasure.  Enjoy



  • 1 3/4 cups all-purpose flour
  • 3/4 cup unsweetened Dutch-process cocoa powder
  • 1 1/2 teaspoons baking soda
  • 3/4 teaspoon salt
  • 1/4 cup vegetable shortening
  • 1 teaspoon vanilla
  • 1 cup coconut sugar
  • 1 tablespoon unsalted butter, room temperature
  • 1 large egg
  • 1 cup whole milk
  • 1 teaspoon pure vanilla extract
  • ---Marshmallow Filling---
  • 1 stick unsalted butter, room temperature
  • 1 1/4 cup confectioners sugar
  • 1 teaspoon vanilla
  • 2 cups Marshmallow fluff


  1. Preheat oven to 375 degrees. 

  2. Sift flour, cocoa, baking soda, and 1/2 teaspoon salt into a medium bowl.

  3. Using a hand mixer; beat shortening, sugar, and butter with a mixer on high speed until smooth, about 3 minutes. Add egg, and beat until mixture becomes fluffy, about 2 minutes.

  4. Reduce speed to low while slowly adding in flour mixture until all is combined. 

  5. Drop mounds of dough (about 2 teaspoons each) on prepared baking sheets, spacing about 2 inches apart. Bake until for about 12 to 14 minutes or until the center springs back when lightly touched.  let cool completely on a wire rack.

  6. Meanwhile combine the filling ingredients and blend or whisk well.  Put into a large sealable bag and press marshmallow filling to the bottom edge of the bag.  Cut off the end and press to pipe the filling on one side then close with a cover to create your pie!
