Melt in your mouth meatball sliders

Ingredients

  • Sauce Ingredients
  • 1 (24-ounce) can crushed tomatoes
  • 1 (14-ounce) can tomato puree
  • 1 (8-ounce) can of tomato paste
  • 1/2 teaspoon red pepper flakes, optional
  • 2 garlic cloves, diced
  • 1 teaspoon of dried Parsley
  • 1 teaspoon of dried Basil
  • 1 teaspoon of dried Oregano
  • Salt and Pepper to taste
  • Ingredients for Meatballs
  • 1 pound of ground beef
  • 1/2 pound of ground pork
  • 1/2 pound of ground veal
  • 1 onion, chopped
  • 2 Garlic cloves, minced
  • 1/2 cup Italian Bread Crumbs
  • 1/2 cup grated Parmesan
  • 1/4 cup chopped fresh Parsley leaves (1 tablespoon of dried)
  • 1/4 cup chopped fresh basil (1 tablespoon of dried)
  • 2 large eggs
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 4 tablespoons Olive Oil, divided
  • 2 packages of whole wheat slider rolls
  • Ricotta salata, thinly sliced

Directions

  1. In a large sauce pan add all ingredients except for the tomato paste and bring to a boil. When the sauce boils add in paste. NOTE: Add 1 can of water to the paste, rub the edges and pour into the sauce. Cover and let simmer for at least 30 minutes.

  2. Combine the beef, pork and veal together. Add in onion, garlic, bread crumbs, parmesan and herbs. Lightly whisk eggs and add to mixture with salt and pepper. Using your hands combine well.

  3. Take a baking sheet and line with parchment paper to set the meatballs. To make them roll an melon scoop and roll in your hands then flatten a little so they are not really the shape of a meatball but a think hamburg to fit in a slider roll. Roll all of the mixture.

  4. Take a large sauté pan add oil to coat the bottom and put to medium heat. Cook each side of the meatball for 3 minutes. You don’t want to cook the meatball, just brown the outside. As you brown the meatball put into the sauce.

  5. When you are done browning the meatballs leave the pan on simmer and leave on as long as you can. If you leave for 2-3 hours these meatballs will melt in your mouth.

  6. To serve, take a platter and open the bottom of the roll, add a spoonful of sauce, add the meatball and top with a slice of ricotta salata, cover and enjoy!

    NOTE: As I mentioned above you can also use the meatloaf mix if you have that available at your grocery store. If you are making for a crowd I do recommend you getting 2 packages of the meatloaf mix. I can promise you these will be enjoyed by all!
