Medjool Date Honey Glazed Shrimp

My husband and I were out to dinner recently and we had a mango salad with our meal. We really enjoyed it so naturally I picked one up at the grocery store. I decided to make this Medjool Date Honey Glazed Shrimp and it was really good! This is a great recipe if you are following the paleo diet or gluten free. Simple to make and delicious! Enjoy

 

Ingredients

  • 6 medjool dates, pitted
  • 1 mango, peeled and chopped
  • 1 tablespoon honey
  • 2 tablespoon lemon juice
  • 1 tablespoon garlic powder
  • 2 tablespoon fresh ginger, grated
  • 1 1/2 16/20 shrimp, peeled & de-veined
  • 2 tablespoons olive oil
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground pepper

Directions

  1. Make a date paste by pureeing pitted and chopped medjool dates in a food processor with a little water (1 tablespoon). Then add in mango pieces.

  2. In a large bowl, add date and mango puree, honey, lemon juice, garlic powder and ginger. Mix well to create a marinade.

  3. Add shrimp to bowl and mix until each shrimp is coated with the marinade.

  4. Place in the refrigerator and let the shrimp marinate for at least 1 hour.

  5. Heat a sauté pan over medium heat, add oil and cook marinated shrimp for 2 minutes on each side. Season with salt and pepper to taste then enjoy!
