Lobster Lettuce Wraps

My husband and I are really enjoying lettuce wraps and we truly enjoyed this for lunch while sitting on our deck at the lake!  

This is a great way to use leftover lobster.  Of course all of the lobster for this recipe came from our friends at City Fish!

 

 

Ingredients

  • 2 cups cooked lobster
  • 1/2 cup mayonnaise
  • 1/4 cup freshly squeezed lemon juice
  • 2 celery stalks finely chopped
  • 2 tablespoons chopped fresh parsley leaves
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground pepper
  • 4-5 bibb lettuce leaves

Directions

  1. Take your cooked lobster meat and chop into bite-size pieces and place in a large bowl.

  2. Add in mayonnaise, lemon juice, celery, parsley, salt and pepper to taste.  Place a few large spoonfuls into each lettuce piece and wrap then enjoy!
