Lemon Zucchini Salad

I love a salad with dinner and decided to make something a little different. I created this Lemon Zucchini with all ingredients I had handy in the house.

Especially with all of the zucchini coming out of my salad. I sauteed up 2 zucchini and set aside one for my breakfast the next day. This was so yummy that by the time the platter came to me it was almost gone! A good side of a yummy salad..

I love using my Kitchen IQ grater to prepare my Parmesan cheese! Enjoy

Ingredients

  • 1 zucchini, thinly sliced
  • 1 teaspoon sea salt and 1/2 teaspoon pepper
  • 1 tablespoon olive oil
  • Baby spinach or Mixed greens
  • 1/2 cup fresh or frozen edamame beans
  • 1/2 cup drained canned chickpeas, rinsed
  • 1/2 small red onion, halved and thinly sliced
  • Cherry tomatoes
  • 3 tablespoons parmesan cheese, grated
  • 1 tablespoon chopped fresh basil, plus small sprigs for garnish
  • 4 1/2 teaspoons fresh lemon juice
  • 3 tablespoons olive oil
  • 1/8 teaspoon red-pepper flakes
  • 3/4 teaspoon coarse salt
  • Freshly ground pepper, to taste

Directions

  1. In a large Le Creuset Saute Pan set to medium-high heat and add add olive oil. Once hot add in zucchini and season with salt and pepper. Saute for 7 minutes, flipping once.

  2. Remove from heat and set on a plate to cool.

  3. In you serving platter start by lining with baby spinach or mixed greens. Top with edamame, chickpeas, zucchini, onion, tomatoes, parmesan, and chopped basil.

  4. In a small bowl combine lemon juice, olive oil, red-pepper flakes, salt, and pepper, and whisk together. Drizzle over salad before serving. Garnish with sprigs.
