Lemon Strawberry Meringues Cookies

These cookies are so pretty and make a dessert tray very inviting.  You can really use your creativity on these and make your favorite shapes and sizes.

Ingredients

  • 2 large egg whites, room temperature
  • 1/3 cup coconut sugar
  • 2-3 tablespoons of your favorite seedless jam (I love all natural red raspberry)
  • 1 lemon, juiced ( about 1 tablespoon)

Directions

  1. Preheat oven to 300 degrees F.

    Line 2 baking sheets with parchment paper.

  2. In a medium mixing bowl, blend egg whites with a hand mixer on medium until soft peaks form.  Add in coconut sugar and continue beating on medium speed for about 5-6 minutes.

  3.  In a small bowl, combine the jam and lemon juice.

  4. Using an ice cream scoop or pastry bag, create your meringues and create an opening in the center of the meringue.

  5. Bake for 2 hours.

  6. Let cool and scoop a teaspoon of jam into each center and enjoy!
