Lamb Pops Wrapped with Prosciutto

These make a perfect appetizer for any occasion. This is a quick yet gourmet appetizer to really dazzle your guests! If you can't find lamb chops ask your butcher to cut up a rack of lamb into individual chops. They will gladly do it for you! You can assemble the chops in advance and keep refrigerated until ready to grill. 


  • 12 Lamb chops
  • 2 teaspoons sea salt
  • 1 1/2 teaspoons freshly ground pepper
  • 3-4 tablespoons or more of olive oil
  • 4 cloves garlic, minced
  • 8 rosemary sprigs, removed from stem and chopped
  • 12 slices prosciutto, thinly sliced


  1. Preheat oven to 150° F. Place a baking sheet in the oven. 

  2. Take the lamb chops and spread out on a clean work surface and season both sides with salt and pepper. 

  3. Take the minced garlic and place on a work board along with the rosemary. Combine them together.

  4. Using your hands rub the garlic and rosemary mixture on both sides of the lamb chops. Next wrap each lamb chop with a piece of prosciutto. 

  5. Let rest while you heat a large saute pan over medium-high heat. Once the pan is hot add about 2 tablespoons of olive oil. 

  6. In batches add the lamb chops in the pan and saute for 3-4 minutes per side or until the prosciutto is browned. Place lamb chops in the oven to finish cooking and to keep warm before serving. 


    Cindy's Note: If you can't find lamb chops ask your butcher to slice up 1 or 2 racks of lamb for you. You can do it yourself but this is a great way to get it done for you. 


    How to finely mince garlic!: If you want to use garlic as a rub and finely mince your garlic here is a great tip. After you peel and chop your garlic continue to finely chop. Take a pinch of sea salt and sprinkle on the garlic. Take the flat edge of your chef's knife and press firmly down to the garlic and rub on the board.
