Kielbasa and Cabbage Soup

I love soup and especially in the fall and the combination of the vegetable and beef broth make this a perfect lunch.  Today we are at our lake house enjoying the foliage.  This soup only take a few ingredients and it's perfect!  Enjoy this healthy Paleo soup today...  


You can even throw all of the ingredients in your slow cooker!  Set to low for 4 hours and enjoy.


  • 1 tablespoon olive oil
  • 2 carrots, peeled and sliced (about 1/2")
  • 1/2 cup yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground pepper
  • 1 (14 ounce) smoked kielbasa, sliced (1/2")
  • 1 pound purple cabbage, chopped
  • 2 cups low-sodium vegetable broth
  • 1 1/2 cup low-sodium beef broth


  1. In a large soup pot add in oil over medium heat.  Once hot add in carrots, onion and garlic.  Cook for 3 minutes stirring often using a wooden spoon.  Season with salt and pepper.

  2. Add in kielbasa and stir while heating through for 5 minutes.  Toss in cabbage and stir to cook for 7 minutes.

  3. Pour in vegetable and beef broth.  Lower heat to a medium-low then cover to cook for 20 minutes.  Enjoy!
