I love salmon so when we have it during the week I get a pound for the 2 of us. Then there is enough for me to add into my eggs in the morning or over a salad for lunch.

Preheat oven to 500 degrees F.
Place salmon skin side down in a baking dish. Drizzle olive oil then season with salt, pepper and Italian seasonings.
Roast for 12-14 minutes; let rest for a few minutes then enjoy!
