Italian Herb Crusted Roast Pork

When I was a little girl my Nana always had Sunday dinner at her house. Even is she was making meatballs she would make an Italian Pork Roast.  I seem to do the same thing as you always want to have enough food... 


  • 1 (4-pound) boneless pork loin
  • 2 teaspoons sea salt
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon onion powder


  1. Preheat oven to 475 degrees F. Place pork loin on the rack of a roasting pan. Salt the roast.

  2. In a bowl combine the olive oil and all of the herbs. Rub roast with the herb mixture and massage to cover all of the meat.

  3. Roast the pork for 30 minutes then reduce the oven temperature to 425 degrees F for an hour. The meat internal temperature reaches 155 degrees F.

  4. Let roast set for 20 minutes before carving.
