I never ate them often but every once in a while there was a “craving” for onion rings. My husband and enjoy as a “treat” but always regret the decision after. Recently after having that “craving” again I decided to put together a healthier and guilt “free” way to enjoy this lovely side! I made herb baked onion rings and they were a hit and actually taste better then the traditional fried. A keeper in our house! They are also a paleo recipe and gluten free NOT to mention AMAZING!!
Tip: Do not use the smaller rings of onion. Put them aside and use in a salad or cooking!
Preheat oven to 450 degrees.
Take your prepared onions and set aside. In a large bowl add almond flour, coconut flour, arrowroot, parsley, basil, thyme, salt, paprika, garlic and onion powder. Mix together with a fork or whisk. Take another large bowl and whisk the two eggs together. First dip an onion ring into the egg wash, then dip to coat in the dry mixture.
Place on a parchment paper lined baking sheet or onto a wire rack sitting inside of a baking sheet.
Bake for 20-25 minutes or until golden brown.
Note: If you are using a parchment paper to line your baking sheet then flip over at 12 minutes to crisp both sides. Enjoy
