Garlic Avocado and Shrimp with Queso Fresco

I always keep a bag of frozen shrimp in my freezer. The are so easy to thaw and serve for a perfect appetizer.

  • 3 ripe avocados, from Mexico
  • 2 cloves garlic, mashed
  • 2 teaspoons cumin
  • 2 teaspoons paprika
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground pepper
  • 1 pound medium shrimp, cooked
  • 1/4 cup queso fresco, crumbled
  • Fresh parsley, chopped
  • 1 lime, for garnish

  1. Slice open each avocado and remove the pit.  Rub a tablespoon along the skin and the flesh and put in a large bowl.  Take a fork and mash until smooth.

  2. Add in garlic, cumin, paprika, salt, pepper and lime juice.  Combine into the avocado.

  3. On a large platter spread a layer of avocado to cover evenly.  Top with shrimp then add queso fresco.  Garnish with fresh parsley.

  4. Slice the lime in 1/2 and squeeze one half over the shrimp then slice the other half and put on the plate when serving!
