I love avocados but hate when they go bad on the counter! I am sure you have thrown them away and was not happy about it! Well I had 2 on the counter and decided to bake it with a frittata in the hole!
I used leftover cooked bacon but you can use sausage or any other left over meats or even vegetables from dinner last night.
I actually made an avocado, tomato and red onion salsa on the side but forgot to take a picture. Sorry.. Just dice them up and sprinkle a dash of sea salt and drizzle with EVOO. That's all... Enjoy
Preheat oven to 350 degrees
Take your avocado, slice in half, remove pit and use a spoon and remove about 1/8 inch of the avocado then dice and set aside with a squeeze of lime juice (use it to make your salsa with tomato and red onion diced - set aside).
Place avocados in a small pan (if they seem to move around them add foil in between them to let stay still in the pan). Place 4 pieces of spinach in each half.
Place the red pepper and mushrooms with 1 tablespoon of water in a microwave safe bowl and set for 15 seconds. Drain water and let cool.
In a mixing bowl whisk eggs, add in cooked bacon, peppers, mushrooms, salt, pepper, basil and red pepper flakes. Divide between the 2 halves and bake for 20 minutes.
Drizzle with EVOO (optional but good) and Enjoy.
