French Chocolate Cake


  • 2 tablespoons coconut oil, melted
  • 3 tablespoons agave
  • 10 ounces semi-sweet chocolate
  • 3/4 cup unsalted organic butter
  • 2 teaspoons vanilla extract
  • 5 large eggs, separated
  • 1/4 cup sifted gluten free flour
  • 1/2 teaspoon cream of tartar
  • 1/2 teaspoon sea salt
  • Your favorite ice-cream or garnish topping
  • Equipment - 9 inch spring form pan


  1. Preheat the oven to 325 degrees F (165 degrees C).


  2. Brush melted coconut oil in your spring form pan. Wrap bottom with foil and place on a baking sheet.

  3. Bring a large pot of water to a full simmer (almost boil). Place a large glass bowl over the pan. **Make sure water is not touching the bowl. Set heat to the lowest setting. Add chocolate, butter, and agave to the bowl. Using a wooden spoon or spatular stir a few times while chocolate is melting. Once melted take off pan, set aside and let cool.

  4. Take 2 bowls and separate egg whites into one and the yolks into another.

  5. Beat the egg yolks into the chocolate mixture one at a time, beating well after each addition. Combine vanilla and flour.

  6. Beat the egg whites using an electric mixer until there are stiff peaks and foamy. Add in cream of tarter and salt and mix a few seconds to combine them well.

  7. Going slowly add in about 1/2 of the egg whites to the chocolate and fold in with a spatula. Then add in the remainder.

  8. Pour batter into the prepared pan, and tap gently to release any air bubbles.

  9. Bake for about 45 minutes to 1 hour. Check the cake after 30 minutes and if it is not rising evenly just give it a little turn. The cake is done when you can insert a toothpick into the center and it will come out clean, for about 45 minutes to 1 hour. Check the cake after 30 minutes: if the cake appears to rise unevenly,

  10. Transfer the cake to a wire cooling rack, and slowly remove the sides of the spring form pan. Cool completely before you remove the base. Enjoy alone or with your favorite ice-cream or topping!
