Flourless Chocolate Ginger Torte with Ganache

I made this dessert for bible study!  My sisterhood loved my chocolate ginger torte!  Go ahead and make it..  It's really Paleo yummy!



  • Coconut oil to coat pan
  • 1 1/2 sticks (12 tablespoons) unsalted butter, chopped
  • 12 ounces enjoy life chocolate chips
  • 1 teaspoon fresh ginger, grated
  • 6 large eggs
  • 1/2 cup coconut sugar sugar
  • 1/4 teaspoon kosher salt
  • -------Ganache-------
  • 1/2 cup full fat coconut milk (or heavy cream)
  • 8 ounces enjoy life chocolate chips
  • 1 tablespoon unsalted butter
  • 1 teaspoon fresh ginger, grated


  1. Preheat the oven to 350 degrees F. Lightly coat the bottom and side of a 9-inch springform pan with coconut oil (melt to brush). 

  2. Combine the chocolate and 1 1/2 sticks butter in a heatproof bowl. Place the bowl in the microwave for 60 seconds.  Remove from microwave and use a spatula to stir until smooth.  Stir in ginger.

  3. In a mixing bowl add in eggs and start to mix them on medium using your hand help mixer.  Add sugar and salt then continue mixing for about 3 minutes.  Until the eggs turn to a pale color.

  4. Slowly fold the melted chocolate into the egg mixture until lightly combined.  Pour batter in the prepared pan.  Wrap bottom of spring foam pan with foil (just an extra precaution) then place on a baking sheet.  Bake for 35-40 minutes.  To check:  Insert a toothpick in the center of the torte and it comes out clean.  Let cool for 10 minutes then remove from pan and transfer to a platter or pie plate.

  5. To make the Chocolate Ginger Ganache!

    Add coconut milk and chocolate in a glass bowl.  Microwave for 1 minutes.  Remove and stir using a rubber spatula.  Add in butter and ginger then stir until butter is melted.

    Use an offset spatula to frost the cake.

    Tip:  If you are placing the torte as I did on a cake stand to serve.  I place 2 pieces of parchment paper (1/2 for each side of the cake) under the cake then frosted.  Removed the parchment paper after frosting for a clean stand to serve your beautiful torte.  Also, add fresh raspberries on to for serving!  Enjoy
