When I was at Stop and Shop looking around for an appetizer for our lake friends the block of Feta cheese stood out! The Boar's head was on sale and was I glad as it made this appetizer perfect! I will be making this over and over again this summer!
Here is my recipe for roasted red peppers!
Preheat broiler to high.
In a glass dish that fits the cheese with a little room (1/2 inch) around it place the block of feta in the center. Add the chopped peppers and olives.
Drizzle with a little extra virgin olive oil (about 2 tablespoons) then sprinkle Italian seasoning.
Place in the broiler about 4 inches from the heat for about 5-6 minutes or until the edges of the cheese become golden brown.
Note: You do not want to melt the cheese but just get the top golden brown.
Serve and enjoy!
PS - the Naan bread was a big hit! I just cooked on a pan over medium-high heat with EVOO for about 3 minutes per side.
