Fall Vegetable Tian

This is a great way to feed a crowd and use a lot of great fall vegetables!  


  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 1 clove garlic, minced
  • 1 zucchini
  • 1 yellow squash
  • 1 medium potato
  • 1 medium tomato
  • 1 teaspoon dried thyme
  • Salt and Pepper
  • 1 cup shredded Italian cheese


  1. Preheat oven to 400 degrees F.


  2. Heat olive oil in a pan then sauté onion and garlic, about 5 minutes, remove from heat. Brush oil in a baking dish.


  3. Place sliced vegetables in the baking dish vertically and alternate pattern. Top with the onion, garlic and oil then season with salt, pepper and thyme. 

  4. Cover and bake for 30 minutes. Remove foil then top with cheese and bake for another 20 minutes.
