Eggplant Francaise

My husband was out doing errands on found a farmers market and came home with eggplant.  I love eggplant.  I decided to cook them up francaise style and I made sandwiches with fresh french bread and sliced mozzarella cheese.  Then pressed on as a panini.  Delicious!

I can just eat by drizzling a little EVOO and some fresh basil!  Perfecto....



  • 1 large eggplant
  • Kosher Salt
  • Freshly ground pepper
  • 1 1/2 cup flour
  • 3 large eggs
  • Oil for frying


  1. Take the eggplant and slice about 1/4 inch thick.  Season both sides of the eggplant with salt and pepper.  Lay a single layer of the seasoned eggplant on a plastic work board. Cover with paper towels.  Do another layer over the paper towel then cover.  Complete the layers using all of the eggplant.  Place a pan on top of the final layer (with a paper towel) and let sit for 30 minutes.

    This step is very important to ensure your eggplants will come out perfect.  There is a lot of water in eggplant this will dry them out and they won't burn when it hits the hot oil in the pan.

  2. Add flour to a large plate of baking dish and whisk eggs in a large bowl.    

  3. Heat a large sauté pan over medium heat.  Add enough oil in the pan to cover the bottom of the pan.  Coat each eggplant into the flour then shake off excess. Then dip in the egg.  Cook for about 4 minutes per side; until brown. Place on a baking sheet and continue cooking.  If you add more oil during batches; let the oil get hot before adding in eggplant.

  4. Keep warm in oven until ready to enjoy!
