Preheat oven to 375 degrees F.
Rinse the beets and trim off any leafy tops. To create your foil wrap - start with a piece of foil on the bottom, place the beats in the center, drizzle olive oil then season with salt and pepper. Place a piece of foil the same size to the top and seal the edges together.
Road in oven for 1 to 1 1/2 hours. Remove from the oven and let cool.
Let cool then peel using a paring knife or by pushing the skin with your fingers.
