Easy Roasted Beets


  • 2 pounds fresh beets
  • 2-3 tablespoons olive oil
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper


  1. Preheat oven to 375 degrees F. 

  2. Rinse the beets and trim off any leafy tops. To create your foil wrap - start with a piece of foil on the bottom, place the beats in the center, drizzle olive oil then season with salt and pepper. Place a piece of foil the same size to the top and seal the edges together.

  3. Road in oven for 1 to 1 1/2 hours. Remove from the oven and let cool.

  4. Let cool then peel using a paring knife or by pushing the skin with your fingers.
