  • 4 skinless, boneless chicken breast, trimmed
  • 2 teaspoons sea salt
  • 3/4 teaspoon freshly ground pepper
  • 1 tablespoon Dijon mustard
  • 4 slices swiss cheese
  • 6 slices ham
  • 3 1/2 tablespoons all-purpose flour or gluten free flour
  • 1 1/2 teaspoons paprika
  • 2 tablespoons olive oil
  • Mallet
  • Toothpicks

  1. Preheat oven to 350 degrees F.

  2. Pound chicken breasts nice and thin with a mallet if they are too thick. Season both sides with salt and pepper.

  3. Spread a thin layer of Dijon mustard on the top of the chicken breast.   Place a slice of cheese then ham on top  within 1/2 inch of the edges. Fold the edges of the chicken then fold in half.   Secure with toothpicks.

  4. Using a plate; mix the flour and paprika together with a fork. Spread another light layer of Dijon mustard on the outside of the chicken then lightly coat with flour mixture.

  5. Using a large baking dish or baking sheet coat with olive oil. Place chicken in dish and bake for 35-40 minutes. Until golden brown.

  6. Remove the toothpicks, and transfer the breasts to a warm platter. Serve warm with your favorite side.
