Date Nut Bread

I like to make this in mini-loaf pans. Leave one out and freeze the rest.

 

Ingredients

  • 1/2 cup water
  • 1 (8-ounce) package dates, chopped
  • 1/2 cup flour
  • 1/2 cup brown sugar, firmly packed
  • 1/2 cup granulated sugar
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 3 tablespoons vegetable oil
  • 1 egg
  • 1 heaping tablespoon grated orange peel
  • 1 cup chopped nuts

Directions

  1. Preheat the oven to 350°F.

  2. Boil the water; pour over the dates. Let cool.

  3. Mix the remaining ingredients together; stir in the cooled date mixture.

  4. Grease the bottom of a 9 x 5 x 3-inch loaf pan.

  5. Pour into the pan; bake for 55 to 65 minutes, or until a wooden pick inserted into the center comes out clean.
