Cucumber and Feta Bulgur Salad

I love Mediterranean salads and always have different sides handy at the lake! I grilled salmon  and vegetables then served with this Cucumber and Feta Bulgur Salad! What another great evening at the lake! Enjoy

PS- I prepared this salad earlier in the day and kept in the refrigerator for dinner!  Before serving I gave it a little stir then drizzled a little extra virgin olive oil.

Ingredients

  • 1 cup fine bulgur
  • 1 teaspoon sea salt (plus more)
  • 1 1/4 cups very hot tap water
  • 1/4 cup finely diced red onion
  • 1 garlic clove, minced
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons finely chopped oregano
  • 3/4 teaspoon freshly ground pepper
  • 1 tablespoon small capers, drained
  • 1/2 cup cherry or grape tomatoes, halved
  • 1 English cucumber, cut into 1/4-inch dice
  • 1/4 cup chopped pitted mixed olives
  • 1/4 cup extra-virgin olive oil
  • 3 ounces feta cheese, crumbled (1/2 cup)

Directions

  1. Add bulgur to a mixing bowl with 1 teaspoon of salt. Pour in hot water and stir then cover with plastic wrap. Let sit until the water is absorbed and the bulgur is tender, about 20 minutes.

  2. Meanwhile, in a large bowl, combine the red onion, garlic, lemon juice, oregano, pepper, capers, tomatoes, cucumber and olives.

  3. Pour in olive oil and coat all of the ingredients.

  4. Fluff the bulgur with a fork and add to the bowl and stir.

  5. Add in feta cheese and toss together and serve!
