Cubanelle and Veal Bolognese

I have found myself to have daily visits to Joseph's Classic Market theses days and creating new recipes.

Not only do we have amazing markets here in Palm Beach Gardens but our farmers markets are spectacular spectacular and only 2 miles from my house each Sunday.  How perfect is that for me!  At the market I always go to Benders tent as they have everything I need and it's fresh.  The prices are great and it's per items so there is no waiting to weigh.  They had cubanella peppers 4 for $1.00.  Of course I got 4 and grilled 2 with our steak dinner.  Looking at the remaining 2 this dish came to me and I served it with sweet potato pasta!  YUMMY Paleo dinner....

 

Ingredients

  • 2 tablespoons olive oil or coconut oil
  • 2 cubanella peppers, chopped
  • 2 cloves garlic, minced
  • 1 pound ground veal
  • 1/2 pound ground chuck
  • 2 teaspoons sea salt
  • 1 teaspoon freshly ground pepper
  • 1 28 ounce can crushed tomatoes
  • 1 tablespoon Italian seasonings

Directions

  1. Heat a large pan over medium heat.  Add in cubanella peppers and cook for about 5 minutes then add in garlic. Cook for another 30 seconds.

  2. Add in veal and beef then cook until brown; about 10 minutes.  Breaking while cooking by pressing a wooden spoon gently on the meat.  Add in salt, pepper, sauce and Italian Seasonings.  Stir and bring to a boil.

     

     

  3. Immediately reduce temperature, cover and simmer for 30 minutes.

  4. Enjoy with your favorite pasta, spaghetti squash or sweet potato noodles.  Enjoy
