This is the perfect Paleo Recipe for any holiday or entertaining. Gather your family and friends for a delicious Paleo Dinner. I love making this beautiful roast. You can fill it with anything. If you live in Connecticut check out D&D Market on Franklin Street in Hartford. They are the best butcher in town and will crown the pork for you and they even have a couple of stuffing mixtures to pick from. Ask them for the booties too! If deciding how many ribs I would say the minimum is 12 to make the circle look amazing. But for a larger crowd you can go up to 16 ribs.

Preheat oven to 375 degrees F. Set rack on the second to the lowest of the oven so the roast will fit comfortably. Bring the pork to room temperature before preparation.
Add celery, onion and carrots to the bottom of the roasting pan.
In a small bowl or canning jar combine thyme, sage, and rosemary. Add in olive oil and whisk well together (alternatively cover the jar and shake really well).
Place the roast on a rack in the roasting pan. Season with salt and pepper. Wrap a foil around each bone. (This will prevent the bone from burning while roasting).
Take a pastry brush and coat the entire roast with the herb olive oil. Add chicken broth or water to the pan. (Over the vegetables).
Fill the cavity with your favorite stuffing or you can stuff it before serving. You can sauté cabbage, make a risotto or even sweet potatoes. If you are stuffing the roast, lightly cover.
Bake for about 2 hours and take off the cover if stuffing and check the meat temperature. (a meat thermometer should be at 150 degrees F when done).
When the roast is done take out of the oven and lightly cover with foil and let rest for 20-30 minutes. Meanwhile you can take off the little foil pieces.
Place on your serving platter and place the little booties on each pork rib! Enjoy
Note: Check the roast every 30-40 minutes. You want to make sure there is plenty of chicken broth or water in the bottom of the pan. (You may need to add more during roasting). Also, you may want to add a little chicken broth or water to your stuffing once you uncover to prevent from becoming dry. REMEMBER - cooking time will vary from a stuffed to unstuffed roast.
